Beer pairing: Tuesday night nachos
A quick nacho recipe and the perfect beer to go with it
Good Morning!
Today we continue our monthly series on food and beer pairings, bringing you an unexpected but classic combination: Vienna Lager with spicy Mexican flavours. Vienna Lager has a long history in Mexico and it remains a popular beer in that country.
So, today being Tuesday, we thought Taco Tuesdays nachos would be a quick and easy recipe to pair with the beer. Nachos are not actually a Mexican dish, but the pairing works nonetheless.

The Dish
These nachos are designed to be weeknight friendly. Minimal ingredients, overload on flavours, so you can eat within 25 minutes.
Ingredients
Serves 6
225 grams of tortilla chips
1 can of pinto beans, rinsed and drained (or use whatever beans you have on hand)
1 cup shredded cheese (just get the pre-shredded Monterey Jack or cheddar mix to keep life simple)
1 bell pepper, chopped, colour of your choosing
1/2 cup feta cheese, crumpled (it makes all the difference)
Store-bought salsa (it's a weeknight, after all. If you want to make your own, here's a red salsa recipe we like)
1 tsp ground cumin
1 tsp chili powder
1 tsp paprika
2 tbsp chopped cilantro
2 green onions, chopped
Sour cream, for dipping
Guacamole, if you want to go big.
Directions
Preheat the oven to 400ºF. Line a baking sheet with parchment paper and spread out a layer of tortilla chips, spreading evenly.
Now add all the goodness to this layer: sprinkle half the beans, half the pepper and half the cheddar and feta cheese on top of the chips. Follow that up with a sprinkle of half of the cumin, chilli powder and paprika.
Top all of this with one more layer of chips and repeat step 2.
If you're making guac or salsa, now's the time to make those, if you didn't have a chance to make them in advance.
Bake in the oven for 9-12 minutes, until bubbly. Remove and set aside to cool slightly.
When you're ready to eat, garnish the nachos with the green onions and cilantro. Serve with sides of sour cream, salsa, and guacamole.
The Beer
As as style, Vienna lager typically presents as a copper or reddish brown colour. You'll pick up malty aromas and a slight sweet maltiness, with a noticeable toasted characteristic. If you're not enjoying this style with nachos, you could also enjoy it with mild cheeses, grilled meats, and grilled vegetables.
If you can, try to serve it in a tall and slender glass.
We've paired these nachos with one of our favourite beers from October, and one that is still available on store shelves, a Vienna Lager from Camp Beer Co. that was originally a collaboration with Delta's Four Winds. The brewery promise a dry and smooth beer perfect for the fall season. It holds up to the promise.
When we tasted it, we found a soft maltiness and moderate bitterness with a reasonable dry finish. This version brings wonderful bread malt notes and an underlying toasted character. We also got spicy old-world hop notes, with a clean lager profile. It is delightful and perfect for your Tuesday Night Nachos.
